Title	Best vegetarian risotto (that isn’t mushroom)

Body	I’m craving a really good risotto but I’m veggie and hate mushrooms. Any recommendations? I’m thinking something like pea and mint or truffle or something like that. There used to be a restaurant in the south side that done a champagne risotto but it’s been closed for like 10 years and I’ve yet to find one as good.
