I cycle from Mount Florida into town during spring and autumn and use the South City Way. The first part runs along Victoria Road with the new segregated cycle paths. As you point out, it's still a bit janky but they are steadily improving it. I've watched the works over the course of \~12 months and the improvement is impressive.

After Vicky road, the route goes up Pollokshaws Road, which also has some segregated cycle paths. Some is on the road (past the Cits and up to the Clyde) which is bad but not nearly as bad as Eglington Toll.

When youre in town, you can traverse the Clyde along the wee walkway (it probably has a name but I don't know it) then shoot up one of the north/south routes.

Sadly, if you're looking for a fully off-road route, you're outta luck.
