Might want to check out Bon Accord, or Babbity Bowster depending which end of the city you find yourself in. Both have won awards recently. Lived near one for a while, live near the other now. They can both be reasonably quiet pubs during the week but will end up packed like any other pub on the weekend. Both are a bit pricey on account of being somewhat famous but the environment reflects it.

Babbity is quite cramped inside so it's got a good wee vibe on those quiet days and has a spacious outdoor beer garden that always smells like barbecue in the summer should you fancy an evening snack. It's tucked away in an alley so just out of range of the foot traffic.

Bon on the other and is an "indoor pub" with a couple benches outside but a lot more indoor space, and a fairly impressive selection of whiskeys leading to an award of best whiskey pub 2020. Good if you feel like sampling a few Scottish Whiskeys before you go, as whatever you're after there's probably a good chance Bon has it.
