There is going to be a lot of trial and error here.

Things like onion salt and garlic pepper really add flavour to veg. Steaming frozen broccoli (just in the colander over some boiling water) with onion salt is my fave!

My man has a chicken salad for his lunch almost every day. One chicken breast (cooked in the over for 40 mins with a mixture of dried spices or herbs), baby leaf salad, cucumber, tomatoes and sugar snap peas with a little olive oil as a dressing.

That would do my nut in, I need variety so I'll do a few days of chicken and veg, chicken salad, a soup etc.

If you're in a position to buy, get a rice cooker, or slow cooker!!

Marco Pierre White has a really good chilli recipe that's easy and a quick watch. Great for batch cooking and you can add in extra veg / pulses to bulk it out.

Also might be worth looking at Joe Wicks (body coach) videos. Just watch, depending on how you're eating some of his recipes are quite high calories.
