I'd also suggest a nice comfy hybrid type of thing, but something not too heavy so it's a bit easier on the hills. Certainly no need to spend the fat end of your price range.

Though it doesn't sound like you're considering it, I'd definitely caution against a 'proper' road bike unless you really want to get into that kind of cycling - Scottish road surfaces are awful and having skinny tyres really limits some of the places you can go.

A cyclocross-type bike is a good compromise that gets you most of the lightness/speed of a road bike but with the ability to ride on rough surfaces.

Bike sales are through the roof right now - not surprisingly - so to a large extent you're going to be limited by what you can find available!
