A lot of the pubs I follow on Instagram have made posts with their rules and most have things like:

- you have to book a table prior to your visit and there's little (if any at all) walk in tables available

- you'll have a time slot on your table (1hr 30mins/2 hours etc)

- your table can only have up to 6/8 people

- you can't sit at any table other than the one you were given upon arrival

- table service only

- contactless where possible

- wear a mask where possible when going to the toilet

I think it's a 'two way street' (is that the right phrase I'm looking for?)

Punters have to obviously be respectful of the rules set out by the pubs and respectful towards the staff. That should be an absolute given. But pubs should obviously enforce those rules by kicking any punters who break the rules out of their establishment.
