Fixed tariffs mean the price per unit doesn't change. You only ever pay for what you use. Most companies will give you an estimate and charge you monthly, the idea being you build up "credit" so in your winter months you have enough extra cash saved up. There is no such thing as "unlimited electric / gas".

If you end up paying £80 a month and only use £60 a month when you move provider they will refund you what you didn't use (If you have more then £50 in credit you can normally ask for a refund instantly)

You are not tied to any provider you can switch to whoever you like providing you are the ones that are paying the bills, use a price comparison site.
