I'd recommend trying to find a Cycle Skills course (run by Cycling Scotland) , sometimes they are free to access... or you can register interest for a family session on their website : https://www.cycling.scot/what-we-do/training

They teach new and returning riders how to cycle on the road, navigate junctions etc


As far as infrastructure maps go, Cycle Streets is quite good: https://m.cyclestreets.net/

To plan routes i use Komoot, you can set your preferences to "tour, road, mtb, gravel " etc depending on what sort of riding you want to do, and it works out routes based on previous rider's routes. I use it as Sat Nav on my bike https://www.komoot.com/plan
