It's not like the EU is unaware of the dynamic between Scotland and the UK. Do you think they're unaware of Scottish politics? Sturgeon has met with EU leaders on behalf of the Scottish Parliament. EU officials have shown support for Scottish membership:

No one is under the impression that Scotland and the UK would sort out the process of separation in a week but just because it would be a process doesn't mean it wouldn't be beneficial. There are so many people saying we shouldn't do it because of the pandemic, but there is always going to be a reason for the naysayers, covid, brexit, financial crash. It's because of things that this that we need more autonomy.
