We did similar in a first floor tenement in pollokshields.

Get a structural surveyor in first that will let you know if it’s practical and cost effective (important) especially on ground floor.

Our costs (6 years ago) were apx:

1k surveyor and building warrant
4K builder to knock the walls down, put the steel beams in and plaster up. We used Queens Park Builder who have a great rep. Don’t skimp when knocking down tenement walls.
2k plumbing. This was a real pain to do
Kitchen and bathroom - we went high end and it cost A LOT

Biggest piece of advice - please be VERY comfortable on the cost benefit. Be brutally honest. No point spending loads on structural work on a cheap flat / unattractive location / where the added value will be minimal.
