As many people have stated cycling is totally fine, I would avoid the canals if you can unless you're planning to hit them early to avoid crowds, it's harder to distance and there are more pedestrians using it than at normal times and they're really not particularly aware of cyclists even though it's a national cycle route. If you're planning to head east on the canals be warned that there are a fuck ton of closures from Falkirk onwards with no diversion instructions.

If you have a gravel/ hybrid or mtb you can go to Milngavie and do some of the west highland way, some of it you might need to push your bike but in general up until Rowerdennan the path is pretty accessible for most skill levels and you get a good break from the city .
