A good comparison would be if you imagine an asda chilled pizza vs a Paesano, or a bagged loaf of Hovis vs a freshly baked artisan loaf. I don't think OP implied that there was anything wrong with the usual bagged bagels from supermarkets, just that they don't quite scratch the itch.
