Having a low end bike will make it less likely to be stolen, but the same rules apply. Always lock it everytime you are getting of it. Doesn't matter if it's only for 30 seconds to get a juice in the shop lock it.
Not much you can do about getting jumped but it's really rare, more chance getting hit by a car/bus/van/idiot dog walker
