I think you've hit the nail on the head there. Glasgow does have a good music, bar and restaurant scene but you're right that it is definitely not world class and I'd say other comparable ex-industrial UK cities (e.g. Liverpool and, most obviously, Manchester) do it better. How many non Scottish people would visit Glasgow for the bars and restaurants over Manchester? Glasgow's techno scene might be the exception to that as it is pretty outstanding and one of the best in the UK, but the Arches shutting down a while back didn't help.

I also very much agree on non-Glaswegians being given a hard time. There is kind of this reverse snobbery, idk? I have even been made fun of because I haven't been to certain clubs or bars even though I lived in Edinburgh so wasn't really able to get through to Glasgow instead during that time for the sake of a night out. It is like if you aren't 'one of us', you just won't quite fit in which I haven't found with many other places like Edinburgh (very mixed and international) or London (perhaps not as 'friendly', but anyone and everyone lives in London and no one cares). Overall, Glasgow is a good city but like anywhere absolutely is not perfect. It is roughly comparable to many other ex-industrial UK cities but doesn't really have that special something to make it worth staying here over anywhere else.
