the difference is in the glass (needs to be hand-polished), the pour (minimum 5 mins), and critically whether the pub sells enough Guinness as the barrel will rapidly go to shit if it sits around too long after being cracked open. The major difference in Irish Guinness is that you will always get a pint from a fresh barrel.
