78 has a new head chef, who had been in the flying duck fixing the mess in there.
The prior head chef from the 78, has moved onto something else, they’re old school mono, and harmonium.
Stereo has literally just reopened. Starting from nothing when your staff have all moved on over the last year is incredibly difficult. The 78 is going through the same thing to some extent.
Also the costs of everything from suppliers has skyrocketed because of brexit and covid.
No chef wants to make the same dish forever, menus are gonna change. |
