my mum is a vegetarian celiac, we used to really struggle for options. but recently what we've started to do is call up in advance and say "hey. I'm happy to eat whatever as long as there's no gluten or meat in it", our experience so far has been really positive - it seems chefs enjoy a bit of a challenge and to make something new. had some really tasty stuff.

But as a rule of thumb. Indian is great, they tend to use Gram flower which is made from chickpeas and has no gluten in it. have alot of good options usually!
