There's two main reasons your floors will be uneven:

1. Subsidence. If this is recent, call an expert as the building may be moving. If long-standing...this is life in an old building, although overboarding could be used (I have had this done in a kitchen).
1. Warping. Over the years wood can shift, any decent joiner can resolve this but it is work (boards up, additional/new joists etc). Although if damp is the cause, that needs addressed first.

Long and short of it, you need someone with experience to eyeball the problem. "Floors not even" isn't much to go on.
