Dont open a bar or restaurant because you havent ever worked in one.

The reason we share our tips is because we are a team. The chefs contribute to making your time there so they get a small cut (no tips for bad food even if service is good) the bartenders chat to folk and serve drinks perhaps before they are seates and eventually get a bill, working hard to get good drinks and cocktails out (long waits bad for tips) and each server helps each other out.

Everyone contributes to you helping your server at your table and we all get a cut because we work as a team. Tipping individuals doesnt incentivise that and that affects your service at the end of the day.
