If the restaurant adds a service charge, it's 50/50 as to whether it goes to the staff. I always ask and they often say they don't actually get the service charge.

So to avoid doubt, cross out the service charge on the bill, pay the remainder less the charge, and then hand over a tip in cash to the waiter/ess.
