1000% I was due to go to Atlanta this week for work and every time I'm there I'm all about Southern food as the only point of reference Glasgow has is KFC. One of my favourite types of cooking. From my personal experience US food gets lumped together in eateries and not much attention is paid to the historical context and what should go with what. Seriously if you open a place that even serves plain grits I'll be there with bells on!
