See, I made a mistake when I went to New Orleans. I got some sensational red beans and rice - with andouille sausage, bone-on-pork cooked till it melted in the mouth and flavour that would make you weep like one of those people in renaissance paintings hearing the voice of god. Then I came back here and found out I couldn’t recreate it cause we only have kidney beans, not red beans, and the French andouille sausage is very different from the Cajun. So for years I have been tormented but longing for something beyond my grasp but forever seared into my memory.

So basically, yeah dude you should totally open up a restaurant I’d go.
