May I suggest Callum Franklin's beef wellington for some extra inspiration. Obviously Gosher can smash out a top tier welly however I'd probably say Franklin's is the best in the world.
His restaurant is called the Pie Room I believe and the story about how he got into classic pastry is quite cool.
