OU graduate here, I studied part time with them and they were great. I got my BSc in 2018. So flexible and understanding for me needing to work at the same time. Lots of my classmates had kids and full time jobs on top of studying. Many employers look more favourably on it because an OU degree means you need self motivation, organisation etc in a different way to a conventional degree. There is support, but all your learning is self-paced. I'm pretty sure you need to be signed up to an official degree route to make credits from courses count though (which starts a timer that gives you 12 or so years to complete a degree IIRC). But even short courses can look great on applications, it's all in how you spin them. It shows interest in subjects and motivation and that you don't need your hand held to complete a course.
