Greenhall Farm - not quite in Glasgow, but 15 mins or so drive away. They do Wagyu steaks but you'd better check on their FB page or call them to see if they have any left before making the trip. Ribeye is my personal favourite.
As for cooking tips:
The most important thing is to leave it out for at least 3 hours (depending on temperature in your house of course) but the meat needs to be at room temperature. Shop-bought instructions always say 10 minutes which is really not enough time...
Pat it dry (both sides)
Salt it.
Ideally get a cast iron pan and use the biggest flame you have on your cooker for about 5 minutes, until the pan is smoking.
Add a tiny bit of butter or sunflower oil to the pan.
Throw the steak in, sear each side for 1 minute if you like it blue/rare or more.
Let it rest for 5 minutes.
If you like well done ignore everything I've said as I have no tips for you 😅 |
