You should get a sugar thermometer in Lakeland (I assume there is still one in Buchanan galleries). That’s what I’ve used in the past. They probably to meat probes (which sometimes have the range to do up to temps needed for oil or jam and come with a clip for the side of a pan) or an infrared thermometer. Good luck
