It will be expensive, but interrailing is quite popular for travelling on Europe. You can buy a ticket that gives you the ability to stop at multiple cities in Europe on the train. I have some friends who have really enjoyed it, but it'll cost a bit!

Flights are probably the cheapest for long distances and maybe buses for travelling on the ground.

Regarding phones - Giffgaff is the network I use. For £10 you get 15gb of internet and unlimited uk calls and texts. Can cancel anytime. But there are lots of online only network providers now that are probably quite competitive in price.
