It really depends what kind of stuff you like! I'm really partial to sour / fermented stuffs so I'd probably recommend mostly sauerkraut based things! Look up *bigos* (sauerkraut and smoked meats stew) which is a Polish cuisine classic and a staple. And of course pierogi are a thing but it's the kind of thing that's easier shown than told in a recipe.

Other than that the simplest recommendation I can give is to try out Kielecki mayo. It's quite different to most other mayos (way sharper) but I fucking love it and managed to convert a few Brits already to becoming its loyal fans!
