The front of house staff get the same or a nominally lower hourly rate than back of house (pennies difference) and FoH either keep their individual tips or pool them amongst themselves while BoH get fuck all. I worked at one tapas place where it was voluntary to pool all and share with all on shift but few did. Most I ended the night with was 2 quid and change while FoH can clear 50 quid in smash a night and into triple digits on weekends.
Also, sharing their tips in the way you describe still isn't 'charging them'. They're still being paid their agreed salary, tips are a gratuity, and in your example are only sharing a % of that. They are not losing money, they are simply making less of it than they could. Your wording implies they are outright hemorrhaging money. |
