1. Maybe money laundering. A bit like all the "American Candy" stores and hand car washes.
1. Non-drinking cultures who want somewhere to go or have different habits to the tanked-up?

I'm leaning *slightly* more towards 1 myself given the population mix and that these places are generally closed during the day when many people wouldn't mind a decent ice cream, and thus they're leaving money on the table.

Or maybe I have the ethnic mix of Glasgow all wrong?
