I was in the exact same boat a couple years ago, unable to get a retail job with an academic biology background. If you are open to jobs within the NHS I believe they have a policy that if you technically tick all the essential criteria they will give you an interview. So you can spend some time tailoring your CV/cover letter to each one. I'm not saying lie but usually you can figure out how your experience matches criteria on entry level jobs.

If you have experience with coding (maybe R or something from your academic background), you might want to consider graduate/trainee tech jobs. I had 0 luck with retail jobs but once I had a little experience coding I was able to land a relatively better paid trainee data job.
