I agree with you that Mexican cuisine is diverse and rich and there are plenty of regional styles that aren’t represented in the US.

I don’t agree that food of the Mexican diaspora - which are both huge communities in cities like San Diego and Phoenix - should be discounted from being called authentic because it was made north of the border. San Diego is 20 miles from Tijuana!

I’m really just trying to highlight Rafa’s as a really special place in Glasgow that does a great job staying true to the communities they come from. If you haven’t been you should check it out! I don’t work for Rafa’s lol.
