I only tap off if I'm making a short journey (<5 stops) and want to make sure I'm charged £1.85, and not the full £2.65.
You're tapping off to let the system know you've finished your journey, so it knows what to charge you. If you've already passed the low fare threshold, there's no point in tapping off.
