This might not help depending on dietary requirements, but my go to is buy a massive amount of mince, make mince and potatoes, portion up 3 full tupperwares of mince and freeze from that. Then it's just a case of defrost one, add herbs and a tin of tomatoes for a bolognese, defrost the other, add cajun spices, tomatoes, peppers (and kidney beans if you are strange) for chilli or enchiladas. Then my favourite is pull out a mince portion, add tomatoes, curry powder and peas for a keema.

Essentially 4 completely different flavours/experiences from a decent 2 for 1 mince deal.
