I can understand why someone who hasn't worked in bars would think that way, but it's not the case since cold, sealed and alcoholic environments like a beer line are hostile for most bacteria and fungus, so cleaning the lines before beginning service isn't necessary. It generally takes weeks for the lines to get dirty.

It would also be financially draining doing it daily, since it involves binning litres of beer from each tap, and running expensive chemicals through the lines. Not to mention it takes a decent amount of time to do too.

Daily tasks to keep up hygiene requirements are cleaning the spouts and drip trays, and of course washing the glasses after each use.
