The irish pint of guinness is a combination of factors - fresh keg, clean lines, correct gas mix, clean glass which (crucially) must be hand-polished with a clean towel, then the long settle and top up.
Nobody in Glasgow does all of that. Even the better pubs such as the Laurieston or Heraghty's cut one or more of the above corners.
