Nah, you need the neeps. Peel them properly, with a knife ( steak knife works best for me because the skins are sturdy and thick - aye, turnips are sexy.) Cut into one inch sauares, boil In slightly salted water until said knife can just pass right through. Be careful with seasoning because too much salt, butter and pepper can seem way too much with neeps. You want to retain some sweetness and a little bitterness, and don't mash too much. The potatoes should be soft, smooth and fucking loaded with butter and salt and pepper, but the neeps need less of all that - should have a more smashed texture rather than whipped or mashed. With the whisky you'll be grand. Drink as you cook. Keep your guests well oiled as well and it'll be Fucking glorious. Burns is great for everything. Play them Jean Redpath singing his filthy masterpiece 'Nine Inch Will Please A Lady ' and the supper will be grand.
