Sorry this is a comment from a year ago so just getting up to speed - I've only mentioned Ghanaian and Ethiopian foodn in this comment but in a separate comment I was simply giving examples of distinctive African cuisine - of course there are plenty more great ones. Most people (me included, for many) don't get to try them all sadly.

I was in Ghana for two months and did find it more simple, but not necessarily bad! Jollof rice was great, food was hearty. I think I was primarily staying in smaller communities so they did not have access to the really really delicious things, just the basic staples that was more simplistic.

Senegalese food does look fantastic!
