Thank you for these delicious recommendations! I think where I stayed in Ghana they did not have access the the best ingredients, so it is certainly the case that sometimes Ghanaian food cooked in different regions (or even abroad!) can taste even more delicious due to what you have access to.

In terms of restaurants, my friend from Nigeria recently visited Glasgow and she went to a really good Congolese restaurant - I am not sure what the name of it is unfortunately, but if you do some googling you may be able to find it.

I live in Bristol currently and there's a lot of yummy Caribbean/Jamaican food here which clearly has lots of African roots - plantain, bean, rice, stews, greens - and is completely delicious.
