Drygate (a Tennets and Williams Brothers partnership micro-brewery) is a good bet for quirky as they sometimes had/have limited edition trials / experiments on tap. It's a little east of the city centre.

There's also West on the Green, also a microbrewery, also east of the city centre (but near Glasgow Green and the river Clyde). Makes beers to German purity laws (I'm paraphrasing and I don't know what that means). If I remember right usually have about half a dozen regulars on tap and two seasonal beers.

People that drink more often than me, feel free to correct this post.
