When I begin crossing the road the car is a safe distance away to allow me to pass, however, once I enter the driver sees me and decides to accelerate because they don’t see pedestrians as human.

But really please ask yourself is there ANY excuse for a driver to ever accelerate when they see a pedestrian in the road. Slowly down to make a pedestrian feel safe is a basic human thing to do.
