Because they are wanks, most people that make a big deal of being "ethical" know they are wanks on some level so go hard on being ethical (or virtuous in another way) after all how could they be wanks when they are so ethical.
Plus you know the type of people that patron those types of places you listed tend to have a fair bit of disposable income, so it's a smart business decision.
