'don’t see why they’d lie about not being tipped'
In zero-hours places the employees often have little wherewithal to fight unfair practices. Managers giving the most hours to people they like is one example. Being overly truthful about not getting your tips would get around so easily and could lead to you bring badly treated.
Plus I don't know how wait staff would know if they were getting the full 10% of what's taken. The only people who would know would be those doing the till takings at the end of the night.
