While I completely despise Orange walks I think the answer is pretty obvious. Camaraderie, in-group psychology and public expression of identity. Very similar to the reasons people love to get dressed up in team colours and watch sports in a large group. It's not a mystery to me, even if the particular identity being expressed is one which is needlessly antagonistic.
