There are companies offering good value tours (I can only think of Rabbies.com but there are others). If you really want to hire a driver, just work out where you want to go and ask for offers, some of the smaller companies might be happy to do that. I always recommend Saltire Transfers for any pre-booked taxi rides but I have no idea if they do that kind of thing.
