You can still get a good sear on the outside of the burger. You just cook at a higher heat but for less time to achieve a burger that's medium, but has the same level of searing (Same concept as a black and bleu steak). It gives you a meal that's way more juicy, still as flavoursome on the outside and more flavoursome on the inside. It's just that it's a pain in the arse to do all this safely in a restaurant, where they're constantly balancing the plates of cost, volume and time. |
