Various mustard crops failed in 2021. I'm not sure how well last year's crop fared but despite good forecasts, it drove prices of mustard seeds up by over 130%.

Availability of the raw seeds might have improved but if the wholesale prices stayed too high, Subway may have decided it was uneconomical to make, or buy, the honey mustard dressing.

The shortage may have also been the impetus to change the recipe last year, which turned out to be unpopular.
