Of those three, Oban.

Fort William to Mallaig is a more scenic route than that but you'll struggle to fit it all in one day, I think - it's about 5 hours one way. So I would prefer Oban as a town you can visit and see in a few hours then come back, rather than getting all the way up to Mallaig and having to come straight back. (The town is too small to be interesting, anyway, so you'd want to stop off at FW or Glenfinnan, but again you'd not have enough time.)

Inverness is nice but not that special imo? like the centre just feels like a miniature version of Glasgow or Edinburgh? if you're going up there you would really want to go there properly, use it as a base and head out to places like Loch Ness and Culloden by bus or car.

Dundee, I visited as a kid but i don't remember well. 🤷
