"An MRI scan for a dog or cat is about £3-£4000. However a private MRI scan for a human at the Nuffield is £350. How can this be so?"

I imagine the answer is volume. A hospital will conduct a lot more MRI scans on a human in a day so the unit cost can be lower.

A vet probably does a lot fewer so charges more to recoup the costs of an MRI machine in a reasonable timescale
