You are meant to clean out completely, and drain, them every however many hours if it's a high use one, or at the end of the day if it's not as busy.
You drain it, wipe down all the insides, santise and then dry it.
The door hinges, all around the handles, the outside handles, all of the inside had this build up of grey sludgy waste. not nice.
